Breakfast was 1 Yellow of whole gran bran cereal (I added 2tbsp of soy milk, eek!). I had my coffee as per my usual and then practically inhaled 1 Red of 2 hard boiled eggs because I was famished.
Snack: I had 8oz of coconut milk with 1 tbsp of my "green" shake with 1 tsp of peanut butter. (It sounds odd, I know, but it was mighty fine).
Lunch was delicious.... Be jealous:
1 Red, a MorningStar Veggie burger (Yumm!), 1 Green that was a mix of cucumbers and shredded carrots, 1/2 Purple of salsa and 1 Yellow for the tortillas. Ole! This was quite satisfying. I almost drenched it in hot sauce (FREE food).... And then I remembered we didn't have the kind I like. Sadness.
Afternoon snack was 1 Purple, navel orange.
I was so hungry at 6pm I had to fight the urge to steal my baby boys pasta dinner. Bad mommy! I held my composure and made my Mr. And myself quite a nice meal.... Totally Autumn approved because I got the idea from the booklet.
Unfortunately I did not take any pictures of dinner because I devoured it like an Alien Vs Predator situation.
However, I do remember how I made it:
Chicken breast covered in mustard, baked. Green beans sautéed in 1 tsp of EVOO and garlic. Spinach sautéed in only lemon juice. I did make an herbed rice for the man... I did not eat it. I was more interested in the amazing flavor of the chicken. Who knew mustard could do such amazing things to chicken? This meal used 2 Reds and 2 Greens and my 1 tsp of EVOO.
Man that was good.
I think today was most challenging because I wasn't as distracted by work though out the day. Instead I had to discover distractions for myself however the plans I had were all squashed by one thing or another. Rain burdened our day mostly and it made it difficult to take the walk to the park with my little spawn like I had planned.
I did complete the 4th workout which was Pilates. All I have to say is: if you plank repeatedly on carpet you will have rug burn on your elbows. 'Nuff said.
Day 4 down, 17 days to go.
